Where most kombucha is fermented in 7 to 10 days, ours takes up to 30. That extra time is not incidental — it is the whole point. Slow fermentation naturally reduces residual sugar, builds a richer culture of beneficial acids, and develops the depth of flavour that fast fermented alternatives simply cannot replicate.

Every batch begins with whole leaf teas, steeped and sweetened, then introduced to our living SCOBY — the same mother culture Elizabeth started with in 2015. The culture consumes the sugar over weeks, producing the organic acids, natural enzymes, and active probiotics that make REAL kombucha what it is.

Tasting Notes
Appearance Deep amber with a warm spiced hue.
Aroma Warm ginger and cardamom with a citrus lift from naartjie and a hint of clove.
Palate Rich, layered and warming. The spice blend builds gradually — ginger and cinnamon first, then cayenne and black pepper on the finish.
Finish Long, warming, with a gentle heat that lingers pleasantly.
The Brew

Eight spices — ginger, cardamom, naartjie, cloves, cayenne pepper, cinnamon, and black pepper — are added before the second fermentation on a black and green tea base. Each spice was chosen for what it contributes: ginger and cayenne for heat, cardamom and cloves for aromatic depth, naartjie for a South African citrus character, and cinnamon and black pepper to round the whole blend.

Available during winter months only. When it is gone, it is gone until next year.

HOW TO SERVE

Temperature
4 to 8°C. Serve fridge cold.

Glassware
White wine glass or champagne flute. Pour slowly on a slight tilt to preserve the natural bead.

Opening
Open slowly with a gentle twist over a sink. This is a naturally carbonated living product — never shake before opening.

Storage
Keep refrigerated at all times. Store upright. Consume within 48 hours of opening.

Sediment
Natural yeast strands or sediment may be visible. This is a sign of genuine fermentation — safe and beneficial to consume.

As a mixer
Tea of Life kombucha pairs beautifully with gin, vodka, or tequila. The natural acidity and botanical depth make it an elegant alternative to sugary mixers.
