When Elizabeth Gunther founded Tea of Life in 2015, she had one non-negotiable: the kombucha had to be real. No pasteurisation. No shortcuts. No CO₂ pumped in to fake the fizz. Every bottle had to arrive at your door exactly as it left the brewery — alive, active, and doing what fermented drinks are supposed to do.

We never pasteurise. Pasteurisation kills the living cultures that make kombucha worth drinking. Every bottle that leaves our brewery contains active probiotics and living fermentation cultures, preserved exactly as nature intended.
Most commercial kombucha ferments in 7 to 10 days. Ours takes up to a month. That extra time naturally reduces residual sugar, builds a richer culture of beneficial acids, and creates the deep, complex flavour you cannot fake with shortcuts.
Long fermentation means the yeast and bacteria consume most of the sugar before the bottle is sealed. The result is a genuinely low sugar drink — not a marketing claim, but a natural consequence of brewing slowly and properly.
